Abstract
The mineral contents of Ipomoea batatas were investigated. The leaf sample was obtained, oven-dried and pulverized into powdery form which was used for the determination of the mineral contents based on standard laboratory procedures. The results revealed that the mean values for calcium, magnesium, zinc, copper, sodium, potassium, phosphorus and iron were 11.75 ± 0.025, 4.63 ± 0.004, 0.18 ± 0.002, 0.38 ± 0.002, 2.23 ± 0.001, 6.15 ± 0.000, 23.53 ± 0.045 and 1.07 ± 0.000 mg/100g respectively. The leaf of Ipomoea batatas is a good source of phosphorus, calcium, potassium and magnesium needed for human nutrition.
