ABSTRACT
The analysis for the antinutritional composition of turmeric (Curcuma longa) was carried out using standard analytical method. The result of the analysis were as follows; phytate 6.29±0.07, tannin 4.21±0.02, oxalate 8.95±0.51 and Hydrogen cyanide 2.91±0.49 comparing the result with the lethal dose limit, it reveals that the concentration of the analyzed anti nutrient were within the permissible limit. Hence, the plant sample is recommended for human consumption.

CHAPTER ONE: INTRODUCTION
1.1 Background of the Study
Medicinal plant has been widely used for both nutritional and therapeutical purposes. Example of such is Curcuma longa.Curcuma longais a rhizomatous herbaceous perennial plant belonging to the ginger family Zingiberaceae. In the past, Curcuma longawas consumed in small quantities as a spice because of the flavour and colour it added to food. However, with increasing knowledge of medicinal potentials of Curcuma longain recent times. Curcuma longa consumed in large quantities, sometimes as Curcuma drin as a composite of flour used confectionaries, and as nutritional supplements. Curcumin is responsible for Curcuma longa biological activities (Chainani, 2003; Peter, 2000).
